This tasty and easy Smoked Tofu Fried Rice is vegan, both oil/gluten free, and super simple to prepare!
This is definitely one of my fave go-to meals. It is quick to make on a busy weeknight and easy to customize with whichever veggies you have on hand and enjoy.
I will sometimes make a double batch on the weekend to have prepped lunches throughout the week!
Watch how simple it is to make!
Smoked Tofu Fried Rice
- 2 tbsp water
- 1/2 cup frozen corn
- 1/2 cup frozen peas
- 1 – 2 green onions, chopped
- 2 cups cooked rice
- 1 cup smoked tofu, cubed
- 2 tbsp tahini
- 1 1/2 tbsp water
- 1 tbsp soy sauce ((I use reduced sodium))
- 1/2 tbsp maple syrup
- 1/2 tsp sambal (or other garlic chili sauce)
- 1/4 tsp garlic powder
Mix together sauce ingredients and set aside.
Place water in a pan or skillet and warm over medium heat. Once warm, add corn, peas, and green onions; stir.
Cook until they have become tender and stir in rice and tofu. Drizzle on the sauce and stir to combine. Allow to cook for 5-7 minutes, stirring frequently to prevent sticking.
Once heated through (and until slightly brown even), remove from stove and serve.
I like to top mine with sesame seeds and more green onion!
