Pre-heat oven to 350F; line loaf pan with parchment paper.
Pour milk and apple cider vinegar into a jar or bowl, mix, and set aside.
In a large bowl, combine all dry ingredients; use whisk to mix together.
In a seperate bowl, mix together the vegan butter and brown sugar. Stir in vanilla and milk/vinegar mix.
Pour wet ingredients into dry and mix until jsut combined; stir in chocolate chips and let sit for about 3-5 minutes.
Mix together sugar and cinnamon topping.
Pour batter into loaf pan and add toppings.
Bake for 42-48 minutes.
Once baked, remove from over and allow to sit in pan for about 5 minutes; then remove and allow to cool before serving.
