Vegan Stuffed Mushrooms



Stuffed with vegan cream cheese, spinach and artichokes, these plant based stuffed mushrooms are the perfect starter for your next dinner party!

I love mushrooms. There, I said it.

It’s funny though, because I absolutely despised them growing up. I can’t even recall when I actually started to enjoy them to be honest. The main point here is that now I adore them and all is well.

Mushrooms are beautiful little things.. they are inexpensive and super versatile. Some of my favourite ways to use them are in stir-fry, breakfast scrambles, and also sautéed and out on top of avocado toast.

Stuffed mushrooms are typically loaded with cheese, and crab, or other meats, however even before becoming a plant-based eater I have always loved them with a simple mix of spinach and artichoke (aka the dream team). Then when I realized you can get vegan cream cheese, I knew this had to happen

.Now, as far as vegan cream cheese brands go, I prefer Tofutti. I am always up for trying something new, however this one just reminds me the most of actual cream cheese.I topped mine with a little Panko, however this is completely optional. I do enjoy the teensy little bit of crunch it adds though!

These vegan stuffed mushrooms are quick to prepare and can even be made ahead of time and then just popped into the oven prior to serving. Perfect for when you are expecting guests!

Vegan Stuffed Mushrooms

  • 12 mushrooms ((I use creminis))

  • 1/2 cup vegan cream cheese

  • 1/2 – 2/3 cup chopped spinach

  • 1/2 cup artichoke

  • 1 tsp lemon juice

  • 1/2 – 1 tsp Old Bay seasoning

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • panko for topping ((optional))

  1. Preheat oven to 400° F.

  2. Remove stems from mushrooms and wipe caps clean; place in oven safe dish.

  3. Mix filling ingredients together, and divide amongst mushroom caps; top with panko if using.

  4. Place in oven for 15-18 minutes (broil afterwards for a few minutes if desired)
